The perfect brunch!!! Chorizo, avocado and a fried egg served on sourdough. Seriously whats not to like!! I walk past this cafe everyday on route to my studio... It's fab! It's called Belle Amie on Garrett Lane. If your in the area you should definately give it a try! Great coffee too ๐Ÿ™‚ 


Chorizo, Avocado & Egg

Ingredients (Serves 2)

 

2 Avocados 

 

1 large red chilli

 

A large handful of coriander

 

The juice from 1 lime 

 

Half a Chorizo Sausage

 

2 Medium eggs

 

Fresh sourdough

 

Rape Seed Oil

 

 

Method

 

1)Prepare your avocados. Once you have removed the skin and the stone, put the Avocado into a bowl and mash with a fork. Squeeze in the juice from your lime. Roughly chop your coriander, and stir through. Season to taste. Cover with cling film and set a side

 

2)Slice 2 large slices from your sourdough

 

3) Chop your Chorizo into slices. Fry in a hot pan for about 4 minutes. No need to add oil or the Chorizo is oily enough! 

 

4) Whilst your Chorizo is cooking, heat a griddle pan. Once the pan is at temperature, brush with a little rape seed oil and pan cook. Roughly 2 mins each side

 

5) Remove the chorizo from the pan, add a little more rape seed oil. Get the pan to a medium heat, and fry your eggs

 

6) Finely chop your chilli

 

7) Now it’s time to serve! Build the dish up in layers, Toast, avocado smash, Chorizo, fried egg, and then garnish with chopped chilli. 

 

 

Season and serve with a flat white.
